Scallop Plants
With 110,000 square feet of the industry's most advanced grading, processing, freezing, and cold storage capabilities, Eastern's scallop production facilities are designed to efficiently process large volumes while maintaining the highest levels of quality and safe handling.
Grading Fresh scallops are washed in a salt brine solution to remove any grit/particles and transported by conveyor to the gram scales.
Scallops are separated into specific programmable sizings per customer specifications. Once graded by size, the scallops are sorted onto conveyors to insulated bulk holding containers.
Stirring Following grading, the ice slurry system maintains a water temperature of 32 degrees inside insulated bulk holding containers. The slurry system is preprogrammed to exact temperature and solution concentrations depending on customer specifications.
The Skaginn stirring system in use at Eastern is an advanced technology used by few companies worldwide. Insulated bulk containers move through each station automatically on conveyors. A mixing arm stirs the scallops evenly, enhancing product consistency.
IQF From insulated bulk containers, fresh scallops are placed on conveyors and frozen along two high-speed, fully automated IQF lines. IQF scallops are ice-glazed (a protective barrier that prevents freezer burn and prolongs shelf life), packed in poly bags, and sealed to protect product integrity.
Block Freezing Fresh scallops are fed into protective plastic bags, which are placed into block boxes prior to freezing. Multiple large-capacity plate freezers provide a significant freezing capacity.
Cold Storage Eastern’s onsite cold storage capacity exceeds 2,000 pallets.
Quality Assurance Eastern’s scallop plants are HACCP, USDC Type 1, Grade A, and E.U. approved. |
